Kid Friendly Carrot Apple Muffin Recipe

Instructions
  1. Preheat oven to 350 degrees
  2. Spray muffin pan with oil spray (any spray will work, or a light coat of butter/oil)
  3. Combine flour, flaxseeds, baking powder, baking soda, brown sugar or date paste, cinnamon, nutmeg and salt in a bowl and mix
  4. Add egg, orange juice and applesauce to the bowl, mix thoroughly
  5. Add in shredded carrots and mix until blended
  6. Spoon mixture into muffin tins, fill about 2/3 full
  7. (Optional: top muffins with walnuts)
  8. Bake for 20 min or until browned
  9. Cool before serving
Recipe Notes

** Please note, this recipe has the option to top with walnuts which is great for older kids (over 4-5 years) but could be a choking hazard for babies and younger kids. To make this recipe for kids below 5, omit the walnuts from the top of the muffin.
